3 Ways to Reinvent Chocolate Chip Cookies

This month, the Scout Elves are remixing a Christmas Eve classic to create three fun new recipes for you and your family to try! Get creative with these mighty mint chocolate chip, rich red velvet white chocolate chip and caramel crunch chocolate chip cookies to wow your family and give them a new favourite treat to talk about!

Caramel Crunch Chocolate Chip Cookies

Caramel Crunch Chocolate Chip Cookies

You’ll Need:

  • 290g all-purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons cornstarch
  • ½ teaspoon salt
  • 200g unsalted butter
  • 130g brown sugar
  • 65g sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 130g toffee pieces
  • 130g chewy baking caramels, cut into small pieces
  • 130g chocolate crunch bar
  • 65g semi-sweet chocolate chips
  • Parchment paper

Directions:

  1. Preheat the oven to 180 degrees and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, cornstarch and salt. Set aside.
  3. In a separate bowl, beat the sugar, brown sugar and butter together.
  4. Add in the eggs and vanilla extra and beat until combined.
  5. Pour in the dry ingredients and mix until a dough forms.
  6. Fold in toffee pieces, caramels, crunch bar and chocolate chips.
  7. Roll 1 ½ tablespoons of dough into a ball and place on the parchment paper–lined baking sheet.
  8. Bake for 10–12 minutes. (Helpful hint: cookies will spread due to the caramel in the dough.)
  9. (Optional) To add a caramel drizzle to the cookies, use a double boiler method: take approximately 15 caramels and combine with milk in a small pan. Place the pan over another pan filled with boiling water. Constantly stir the caramel until runny. Use a spoon to drizzle the caramel on top of the cooled cookies.
  10. Take a bite out of your chocolatey and crunchy creations!

You’ll Need:

  • 320g cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 130g butter or margarine (softened)
  • 160g cup sugar
  • ½ teaspoon peppermint extract
  • 2 eggs
  • 6 to 8 drops green food coloring
  • 260g crème de menthe candies (cut into small pieces)
  • 130g semi-sweet chocolate chips

Directions:

  1. Preheat the oven to 180 degrees.
  2. In a large bowl, beat the butter and sugar together until light and fluffy.
  3. Next, add in the eggs, peppermint extract and food coloring. (Helpful hint: Six to eight drops will give the cookies the perfect minty color!)
  4. In another bowl, combine the flour, baking powder and salt.
  5. Add the dry ingredients to the wet ingredients and beat until a dough has formed.
  6. Fold in the crème de menthe candies and chocolate chips.
  7. Place small balls of dough (about 5cm wide) onto the cookie sheet.
  8. Bake for about 8-10 minutes, or until you notice the cookies browning on the edges.
  9. Let the cookies cool and then dig in!

Rich Red Velvet Chocolate Chip Cookies

Rich Red Velvet Chocolate Chip

You’ll Need:

  • 225g cup all-purpose flour
  • 30g unsweetened baking cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 65g butter, softened
  • 65g sugar
  • 65g brown sugar
  • 2 teaspoons vanilla extract
  • 1 egg
  • 2 tablespoons milk
  • 2 teaspoons red food coloring
  • 130g white chocolate chips

Directions:

  1. In a large bowl, whisk together the flour, cocoa powder, baking powder and salt.
  2. Use a mixer to beat the butter until creamy (approximately one minute).
  3. Add in the sugar and brown sugar and beat until creamy (approximately one minute).
  4. Beat in the egg, milk, and vanilla extract and food coloring. (Helpful hint: add more food coloring for even richer colored cookies).
  5. Pour the dry ingredients into the wet ingredients and mix on low until soft dough is formed. (Helpful hint: the dough will be sticky.)
  6. Fold in the chocolate chips.
  7. Chill the dough for about an hour.
  8. Preheat oven to 180 degrees.
  9. Roll 1 ½ tablespoons of dough into a ball and place on a baking sheet. Bake for 10–12 minutes.
  10. Let the cookies cool before enjoying these rich red velvet treats!
